For Dar Matushka sorcery, I am thinking of categorizing the animals in some way and doing the See/Call/Transform Choice based upon that. I've added a few also to round out the lists. My two options are:
Option 1: Group by Purpose - With this, I would likely give the Sorcerer a choice of 1 from each list each time the Advantage was taken
Group 1 (Companions): Cat, Fox, Rabbit, Seal, Snake, Turtle
Group 2 (Scouts): Bat, Fish, Mouse, Owl, Raven
Group 3 (Mounts): Antelope, Elk, Goat, Horse, Reindeer
Group 4 (Aggressors): Bear, Boar, Lynx, Tiger, Wolf
Option 2: Group by Terrain (With Overlap) - With this, I would likely give the sorcerer a choice of 1 Terrain each time the Advantage is taken
Group 1 (Shores): Fish, Goat, Seal, Shark, Snake, Turtle
Group 2 (Forest/Taiga): Elk, Fox, Lynx, Rabbit, Wolf
Group 3 (Steppe): Antelope, Boar, Horse, Lynx, Mouse
Group 4 (Mountain): Bat, Bear, Elk, Goat, Tiger
Group 5 (Tundra): Bear, Fox, Lynx, Reindeer, Seal
Group 6 (Urban): Boar, Cat, Horse, Mouse, Snake
Of the two, I think Terrain works better, though I might suggest limiting them to four animals within a Terrain type, even if there would normally be some degree of overlap (like Snake showing up Shores and Urban).

With the 'official' answer from Mike Curry now about See/Call/Transform, I've spoken to the person playing the sorcerer and we've come up with our solution:
See: Choose 3 animals from a terrain type when you pick this Gift
Call: Choose 2 animals from a terrain type when you pick this Gift
Transform: Choose 1 animal from any terrain type when you pick this Gift
Will see how it goes :)
Where's the 'official' answer?
Posted on the Reddit thread for Mike Curry's post. I also copied it to another thread. Essentially it was "We intended it to be Pick 1 Animal when you take the Gift" and if you wanted more than 1 animal take the Gift multiple times.
I like Terrain as well. Very nice. But why, oh why, have you left "Shark" out of the the Shores terrain?
I just didn't think of it, but that's a good one to provide a predator/aggressor for Shores
